VINIFICATION:
CAREFULLY SELECTED GRAPES ARE HARVESTED BETWEEN THE END OF AUGUST AND THE BEGINNING OF SEPTEMBER. AFTER THE PICKING OF THE GRAPES, THEY ARE DESTEMMED, CRUSHED AND LIGHTLY PRESSED. AFTER REMOVING THE MUST FROM THE LEES FOR ABOUT 12 HOURS AT AN AVERAGE TEMPERATURE OF 13°C, THE MUST BEGIN TO FERMENT WITH THE HELP OF SELECTED YEASTS. ALCOHOLIC FERMENTATION TAKES PLACE AT 16/18°C IN STAINLESS-STEEL TEMPERATURE-CONTROLLED VATS AND LASTS FOR APPROXIMATELY 10 DAYS. WHEN ALCOHOLIC FERMENTATION IS COMPLETE, THE WINE RESTS IN STAINLESS-STEEL VATS AT 16°C BEFORE BEING BOTTLED.

ORGANOLEPTIC:
STRAW-YELLOW WITH GREEN HUES; WITH HINTS OF RIPE PEAR AND WILDFLOWERS AND A SLIGHT FINAL NOTE OF BREAD CRUST. THE PALATE IS FINE, FRESH, TASTY, BALANCED AND HONEST WITH A GOOD AROMATIC PERSISTENCE.

THE MONTE TONDO’S HILLS

Clay-free soil with a calcareous skeleton, optimal for a marked minerality and intense fruity aromas. Here comes the "Monte Tondo" wine, our Soave.

THE MONTE FOSCARINO’S VINEYARDS

Land of basaltic origin with a clay-loam-silky texture, with very pronounced slopes and altitudes up to 280 m. Defined a terrain for heroic viticulture. Here we produce our two CRù: Soave Classico "Casette Foscarin" and the Soave Superiore DOCG Classic "Foscarin Slavinus"

THE MONTE TENDA THE SCALIGERO GARDEN

Terrain of calcareous origin, with a clay loam texture. South-west exposure at 110 m. Here we select the grapes for our Recioto di Soave DOCG.

THE MONTE GAZZO SOAVE DOC AREA

In this vineyard with clay soil, we produce our Soave DOC and Cabernet Sauvignon grapes for the production of our red "Giunone". This wine of great structure, was the first red wine of our production.
